A Note From Kate Hudson: Summer Salads

The farmer’s markets are filled with great seasonal produce all summer long, and I like to take advantage by incorporating as much of it as possible into my meals. Two of my favorite summer salads take just minutes to make and feature delicious fresh ingredients:

Ina Garten’s Arugula, Watermelon and Feta Salad
Heirloom Tomatoes and Cheese
Ingredients:
• Heirloom tomatoes in varying colors
• Fresh mozzarella or burrata cheese
• Fresh herbs (I like to use basil and thyme)
• Lemon
• Shallots
• Olive oil
• Red wine vinegar
• Salt and pepper
• Sugar

Cut the heirloom tomatoes into large slices and arrange them in a single layer on a large platter. Sprinkle the basil (chopped into fine, long strips) and thyme over the tomatoes. Press the garlic and whisk it together with shallots, olive oil, red wine vinegar, lemon juice, salt, pepper and a pinch of sugar to taste. Pour the vinaigrette over the tomatoes and herbs. Sprinkle lightly with sea salt and cracked pepper. Layer slices of fresh mozzarella over the tomatoes and herbs or place a large chunk of burrata in the middle of the platter.
