A Super Delicious, Superfood Pudding With Chia Seeds

When you think of “pudding,” you probably think of something pretty delicious, but also full of empty calories. Well, think again, because we infused this recipe with one of our favorite superfoods, chia seeds! Chia seeds are packed full of omega-3 fatty acids, which possess a plentitude of health benefits, like lowering cholesterol and regulating blood pressure. Add into the equation a hefty dose of fiber, protein and calcium, and you’ve practically got yourself a pudding vitamin.

Recipe: Two-Layer Beet Rose Chia Pudding

Serving Size: 2

Step 1:

Rose Chia Pudding (Bottom Layer)

Ingredients:

1 cup unsweetened almond milk (or favorite non-dairy milk)

¼ cup + 1 tbsp chia seeds

½ – 1 tbsp pure maple syrup (adjust to your sweetness preference)

1 tsp rose water

½ tsp vanilla extract

Directions:

  1. Whisk all ingredients in a bowl. Mix well. Cover with plastic wrap and place in fridge overnight.
  2. Side note: If you’re not familiar with where to pick up rose water, you can find a bottle at your local Mediterranean/Middle Eastern market. You can also try health food stores, natural grocers, or order online.

Step 2:

Beet Chia Pudding (Top Layer)

Ingredients:

1 cup unsweetened almond milk (or favorite non-dairy milk)

¼ cup chia seeds

½ – 1 tbsp pure maple syrup (adjust to your sweetness preference)

1 tsp beetroot powder

½ tsp vanilla extract

¼ tsp cinnamon

Directions:

  1. Whisk all ingredients in a bowl. Mix well. Cover with plastic wrap and place in fridge overnight.

Step 3:

Combine layers

Directions:

  1. In the morning, remove the bowls of chia pudding from fridge.
  2. Grab your favorite jar, bowl, or glass. Add the Rose Chia Pudding to the bottom half first. Then layer the Beet Chia Pudding on top.
  3. Optional: Top with beautiful edible flowers, fresh berries or seasonal fruit.
